Sensory characteristics

Golden yellow, fine and persistent perlage.

Delicate, scent of pepper, geranium, fine spices, ripe peaches, apricots and exotic fruit.

Mellow, enveloping, salty, sapid, sweet and clean, almost silky, very complex.

Is rich in mineral compounds, limestone, phosphorus, potassium, and gravelly-iron; is alluvial, pebbly and typically called “Ferreti”.

Vine training system
Guyot – Simple Cappuccina, medium-short pruning which is not rich in buds.

Methods of protection
Integrated, supervised control which is partially conducted in biological form; traditional agrochemical cultivation.

Serve with

Soft fruit, raspberries, strawberries, blueberries, apricot tarts, Sachertorte Cake and Sicilian sweets with candied fruit; it is exquisite with oysters.

Serving temperature

8-10° in the summer and 10-12° in the winter; serve in a medium-long stemmed, wide-sized glass.

Harvest period
The third period of maturation, the last ten days of September and the first ten days of October depending on climatic progression.

Picking method
Strictly by hand via a selection of clusters as foreseen by the Statute’s production Regulations.

The de-stemmed grapes stay in cold maceration for a long time inside cooled pneumatic presses; the must is drawn and cleaned and then placed in pressure-sealed autoclaves for the capturing of foam directly with the same sugars and yeasts of the grapes.
