Sensory characteristics
Straw yellow, crystalline.
Of apples and acacia honey, with maturation it acquires the smell of ripe peaches.
Delicious, very fresh and complex, mellow and delicate.
Vine training system
Guyot-simple and double Cappuccina, intense number of plants, medium-long pruning but not rich in buds.
Serve with
An excellent aperitif which also goes well with seafood, shellfish, risotto with fish, linguini with salmon, delicate-flavored pasta dishes, white meats and omelets.
Serving temperature
Store the bottle in a cool, dark place with a fixed temperature; serve at 8-10° in good weather and at 11-13° in the winter in a medium-stemmed glass which is shaped like a just-bloomed tulip.
Vinification
The de-stemmed grapes macerate for a long time in cooled pneumatic presses in order to extract from the skin the antioxidant substances which are beneficial to the human body; the must ferments at a controlled temperature and is then drawn into large barrels.
Refinement
7 months on its own yeasts in large, oval-shaped oak barrels of three different essences.
