Sensory characteristics

Light garnet red, transparent.

Of ripe fruit and cherry fruit preserves.

Slightly spiced with inklings of hazelnut and walnut husks, well-structured, mellow and full-bodied.

Vine training system
Guyot-simple Cappuccina, medium-intense plant density, short or medium pruning which is not rich in buds.

Harvest period
First period of maturation, early-middle of September.

Serve with

Savory pasta dishes, barley and beans, game, roasted and boiled meats.

Serving temperature

At room temperature in the winter and at 12-14° in the summer in a wide, capacious, round long-stemmed glass.

Vinification
The de-stemmed berries macerate for two weeks; at the end of fermentation they are drawn.

Refinement
In large oak barrels for a year.
